Recipe: Japanese Omelette
Morning...
Serves: 1
What you'll need...
- 15g of dried bonito fish flakes
- 2 eggs
- 1/4 tsp of vinegar
- A splash of cooking oil
- Japanese radish
- Soy sauce
Step 1 Boil roughly 100ml of water and add dried bonito flakes. Once the water returns to a boil, strain it and retain the stock.
Step 2 Beat eggs and add your stock and vinegar.
Step 3 Heat up a bit of oil in a small frying pan (around 12 cm is good) and pour in 1/3 of your eggs. Once the eggs have cooked slightly, roll the egg towards you...then push it away and pour 1/2 of the remaining egg into the pan and under the first rolled egg.
Repeat this process until your supply of eggs is finished. Cook your eggs until the omelette is puffy and slightly darker in colour.
Step 4 Serve the omelette with grated Japanese radish and soy sauce.
