The 1975 Japanese Diet: Why Scientists Keep Returning to This Exact Era
If you have ever heard the phrase “Japanese diet” used as a shorthand for healthy eating, you have probably noticed it covers a lot of ground. The Japanese diet of 1960, of 1975, of 1990, and of 2005 are genuinely different meals, with different proportions of rice, fish, vegetables, oil, sugar, and meat. Over the past decade a team at Tohoku University in Sendai has worked through that difference with mice, with humans, and with mass spectrometers, and they keep landing on the same answer. The 1975 version is the one with the strongest health effects. It is not a marketing slogan or a nostalgic claim about “the old days.” It is a specific era of the Japanese table that keeps outperforming the others in the lab and the clinic, and the reasons are getting clearer.

The Tohoku group did not invent the 1975 diet. They reconstructed it from the National Health and Nutrition Survey of Japan, building one-week menus that reflected what people in that year actually ate. Picture a household table in the middle of the Showa era. Rice is still the carbohydrate backbone, but portions are modest. Small amounts of fish and soy foods show up at most meals, with seaweed, eggs, and a little chicken or pork rotating through the week. Vegetables appear in many small dishes rather than one big salad, often pickled, simmered, or dressed with sesame and vinegar. Fruit is a snack, not a meal. Cooking fat is restrained, and the umami comes from dashi made with kombu and katsuobushi rather than from butter or cream.
This is recognizably washoku, the traditional pattern UNESCO recognized as an Intangible Cultural Heritage in 2013, but the 1975 menu sits at a particular crossroads. By 1975 Japan had recovered economically from the postwar austerity that defined the 1960 diet, so there was more variety on the table. The Tohoku University Experiments
The flagship study fed senescence-accelerated SAMP8 mice four different powdered diets reproducing the 1960, 1975, 1990, and 2005 Japanese menus, alongside a control group on standard lab chow. The mice ate their assigned food across their lifetime. The 1975 group lived longer than the 2005 group, showed delayed signs of aging, and held on to learning and memory capacity better in behavioral testing. The 1990 diet also tended to extend life span compared with 2005, but the 1975 diet was the clear leader.
In a follow-up using the same four diets, the 1975 menu produced the strongest suppression of visceral fat accumulation, the kind of belly fat most linked to metabolic disease. Adipocytes, the cells that store fat, were smaller in the 1975 group. DNA microarray work in white adipose tissue showed that genes involved in synthesizing fatty acids were dialed down. When the researchers tested diets that copied only the fatty acid composition of each era without copying the actual foods, the visceral fat effect mostly disappeared, which told them the magic was in the whole pattern. The quality of the fats matters, but so does the quantity, the variety of plant foods, and the way the meal is assembled.
To find out what specifically set 1975 apart, the team ran mass spectrometry on the four reconstructed diets and identified fourteen characteristic components that were enriched in 1975. These traced back to fish, fruits, vegetables, seaweed, soybean foods, dashi, and fermented seasonings such as miso, soy sauce, and rice vinegar. A “modified 1975” diet built around even higher use of those foods produced lower cholesterol and higher serum adiponectin in mice. Adiponectin is the hormone that rises when fat tissue is metabolically calm. Inflammatory markers like IL-6 went down. The biological direction is consistent across the program.
The Human Trial
Mouse studies are useful for mechanism, but the next question was whether the 1975 diet does anything in people. In a randomized controlled trial, healthy adults aged twenty to twenty-nine ate either a 1975-style menu or a modern Japanese diet, three meals a day for twenty-eight days, with food provided by the researchers. The 1975 group came out with significantly lower body weight, lower body fat percentage and fat mass, lower serum triglycerides, lower LDL cholesterol, higher HDL cholesterol, and higher serum magnesium. Twenty-eight days is short for a diet study, and the subjects were young and healthy to begin with, but the direction of every lipid marker pointed the same way.
A parallel arm of that human work looked at the gut. Stool samples from the 1975 group showed shifts in four bacterial genera, including Parabacteroides and unclassified Lachnospiraceae. Those microbial changes correlated with the drops the participants saw in body fat percentage, triglycerides, hemoglobin A1c, and a liver enzyme called glutamic oxaloacetic transaminase. In a separate combined trial of the 1975 diet plus exercise, the Bacteroidetes-to-Firmicutes ratio rose, which is the direction associated with leanness, and butyrate-producing bacteria became more abundant. Butyrate is a short-chain fatty acid that helps maintain the gut lining and damps down inflammation. The gut microbiome is sensitive to what you feed it, and a fiber-rich, fermented-food-rich pattern is the kind of input it responds well to.
Head to Head With the Mediterranean Diet
The Mediterranean diet has its own deep evidence base for heart health and longevity, which made the obvious comparison hard to avoid. In a direct study, mice were fed either the 1975 Japanese diet or a reconstructed 2010 Italian Mediterranean diet for four weeks. The Japanese diet group ended up with lower visceral fat, smaller fat cells, lower liver weight, and visibly less lipid accumulation in liver cells. Gene expression in the liver favored breaking down fats and cholesterol over making them. That is not a dunk on the Mediterranean diet, which the same researchers acknowledge has strong human evidence behind it. It is a sign that the 1975 Japanese pattern, with its low-fat dashi-based cooking, abundant soy and seaweed, and modest portions of meat and oil, hits a slightly different metabolic profile than olive-oil-heavy southern European eating.
What This Looks Like in a Real Kitchen
You do not need to source 1975 Japanese ingredients from a catalog to cook in this direction. The pattern is what matters. A useful frame:
- Build the meal around a small bowl of rice, not a large one. Short-grain Japanese rice is fine. Brown rice is fine. The point is that rice is one component of the meal, not the whole plate.
- Make fish and soy your main proteins, with meat appearing in smaller cuts and less often. Grilled mackerel, salmon, or sardines a few times a week, tofu or natto on other days, with eggs and a little chicken or pork as supporting players, lines up with what 1975 looked like.
- Cover the table with vegetables in several small dishes. Spinach with sesame, simmered daikon, blanched greens with soy sauce, a few cubes of wakame seaweed in a clear broth, a saucer of pickles. Variety is doing real work here.

What the research has done is take a hand-wavy claim about “the traditional Japanese diet” and pin it to a specific decade, a specific set of ingredients, and a specific set of measurable health effects.
